Are you ready for quite possibly the easiest little appetizer/party food/snack ever? This white bean dip takes TOPS five minutes to make. Everything just gets dumped into a food processor and whirled around to smooth, mouthwatering perfection. SO easy it’s not even fair!
What will you use your extra not-prepping-complicated-appetizers-and-snacks time doing? Sitting down with a cup of coffee? Actually applying eyeliner for the first time in two weeks? Folding a load of laundry? Online shopping on Amazon? Great ideas – I’ll join you in the first three. Especially the coffee. But keep me away from Amazon – I’ve ordered enough for the entire life span of fifteen babies.
This dip is smooth from those velvety pureed beans, creamy from the coconut milk, bright and fresh from the lime juice, SO flavorful and complex from that curry powder and garlic, and just ends with a touch of sweetness from our teaspoon of honey. Pair this tasty goodness with a crunchy chip, and you’ve got a party favorite!

Dips are lyfe. Things like this curry dip, hummus, creamy dips (FRENCH ONION YAASSS), guacamole. Sit me down with a big bowl of dip, some crunchy chips, and the Food Network? You’ve got a happy camper on your hands! There’s just something satisfying about a yummy dip heaping onto your chips and veggies, which – let’s be honest – are only part of this equation because they are an avenue to shovel as much dip into your mouth as humanly possible.

Hey. Remember in my last post when I talked about the fact that I wanted to watch Stranger Things season 2 but hadn’t started yet? Lololol – DONE. Binge watched it in two days. In my defense…IN – MY – DEFENSE…they are shorts seasons. It only had 9 episodes.
Also in my defense…I am sitting with a napping baby for probably half of my day because he only sleeps on me. Sooo…I’m productive when I have the ability to be – a.k.a. when he’s awake – and when I can’t be? Helloooo Netflix, my old friend.
Anyway, season 2? TOP NOTCH. Super good. I actually haven’t finished yet – I have like 30 minutes left of the finale because I had to stop watching and go do bedtime stuff with Ford. But I plan on watching it after this blog post is written. Speaking of bedtime stuff with Ford, he has currently been sleeping in the pack in play in my room for about an hour, and I am ABOUT TO GO KIDNAP EVERY SINGLE DOG IN MY NEIGHBORHOOD and set them free miles away in a field. They will not stop barking, and I keep seeing Ford’s little eyes open on the monitor.
Okay. Firstly – why are you letting your dogs bark late at night? (It’s 9:30 pm as I’m writing this, which IS late if you have little kids/babies.) If you’re not at your house and don’t know they’re barking, why are you leaving your dogs outside when you’re not home if they tend to bark??!??! Seriously…quite possibly the most frustrating thing I’ve ever experienced. Ima bout to be THAT neighbor who writes THAT note and leaves it passive aggressively in the mailbox.
Just kidding, I won’t do that. But I’m tempted. Worst case I would just go talk to them during the day sometime…”My husband is deployed, I have a 4 month old, and I am one barking dog away from a mental breakdown. HELP A SISTAH OUT.”
I’ll even bring a Tupperware of bean dip to soften them up 😉.

Ingredients
- 2 15oz cans great northern beans
- 1/2 cup canned coconut milk
- 2 tablespoons curry powder
- 1 clove of garlic
- 1 lime, juiced (about 1 tablespoon)
- 1 teaspoon honey
- Chopped cilantro (optional garnish)
Instructions
- Add all ingredients along with some salt and pepper to your food processor and blend until totally smooth and pureed. Season to taste with more salt and pepper as needed. Top with chopped cilantro (optional)
Notes
This dip would be great with tortilla chips, pita chips, or any type of veggie! It would also be super yummy as a spread on any sandwich or wrap.
