Okay, I mean…let’s just be real with each other for a second. Is there anyone out there who doesn’t have an emotionally intimate moment with their computer screen when they hear words like hot+cheesy+corn+dip in one title? How could this dip possibly not be the most delicious chip topper ever when it’s cheesy, creamy, and loaded with sweet kernels of corn? If I’m being honest, I could go to TOWN on a big bowl of this with a massive ladle normal sized spoon like it was a bowl of soup, buuuttt unfortunately there are social standards that I would be monumentally breaking by behaving that way in public. Which is why I just wait until I’m alone and then eat spoonfuls of it plain.
If a tree falls in the forest when no one is nearby, does it actually make any noise? If I eat three bowls of this dip plain with no chips while alone in my kitchen with no one around, do the calories actually count? For the sake of my mass consumption of corn dip, I’m going to go with no.
The good news is that this dip is on the skinnier, lighter side of the dip train. Made with Greek yogurt, reduced fat cream cheese, a small amount of pepper jack cheese, and lots and lots of corn, it’s definitely less of a calorie overload than some of the other dips out there. So…all the more reason to eat multiple servings and feel baller about it 😉. I gotchyo back, gurl.
The makings of the perfect dip, in my humble, dip-loving opinion: warm, creamy, cheesy, tasty seasonings, and some sort of texture. That’s not to say that I would turn down a hot bowl of straight up queso any day, but I think the formula to a perfect dip is a combination of those elements. Let’s break this one down…
- Warm: this dip is heated up on your stove top until everything is hot and steamy and delicious
- Creamy: thanks to a combination of Greek yogurt and cream cheese, we’ve got creaminess #onfleek
- Cheesy: hi, pepper jack cheese 👋. Thanks for joining our party and making this dip ten times more delicious!
- Tasty seasonings: paprika + garlic powder + salt and pepper = cheesy corn dip dreams
- Texture: heaping amounts of sweet, firm corn kernels are loaded into this dip, giving you little pops of sweetness in each bite 👅
We check every box with this delicious dip, which is why it is so satisfying and fun to eat. I love to eat this with scoop tortilla chips, because that is the best avenue to get as much dip as possible into my mouth with each bite. Aaaannndd, no offense tortilla chip – my crunchy, salty friend – but you have one mission here: transfer dip into mouth. You aren’t the star of this party – no hard feelings.
You guys want to know what I did today that made me feel super productive and awesome? I made homemade baby food! Today is Ford’s first day on solids, so I pureed some sweet potatoes. It could not have been easier since zero extra ingredients go into the sweet potatoes…it’s literally just pureed, cooked sweet potatoes.
It was really fun! And it made me feel like a productive mom, which is not something I usually feel. I totally cheat in lots of other mom ways. Turn on nursery rhyme TV shows on Netflix to keep his attention sometimes, let him play with my phone, things like that, which many people would hardcore mom shame me for.
There is something super satisfying about knowing exactly what you are putting into your baby’s belly and knowing the ingredient list is literally one thing: sweet potato. No preservatives, no chemicals, nothing extra at all. I have absolutely nothing against buying pre-made baby food from the store, and I’ll proooobs end up using that someday when I’m over making my own (also – LOL at the thought of me making my own baby food when I have multiple kids someday), but for now, I really like knowing he is getting whole food that is zero percent processed.
I’m excited to watch him eat solids for the first time tonight – I’m sure it’s going to be a hot mess 😂.
Too bad his first food can’t be this cheesy corn dip, because that’s about a hundred times yummier than plain mashed sweet potatoes! At least I think so 😉. Have a fantastic Monday, everyone!

Ingredients
- 2 cups corn (if frozen, thaw before making dip)
- 1/4 cup fat free plain Greek yogurt
- 4 oz reduced fat cream cheese
- 1/4 cup pepper jack cheese, shredded
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
Instructions
- Add all ingredients together in a pot over medium – medium high heat and stir until the cheese is melted and the dip is hot. Try not to let it boil or the Greek yogurt could separate. Season to taste with salt and pepper and serve with tortilla chips!
