Yeeeeahhhh I kind of love this stuff.

It has so much flavor going on! It takes regular cream cheese, slaps it in the face, and says, “Hey. Get out of here. You pale in comparison to my greatness.”

I don’t know about you, but I think a lightly toasted bagel with cream cheese is one of the best things ever. We almost never eat them because when we go grocery shopping we try to only buy healthy food.

The translation of that last sentence is this: if we bought unhealthy food like bagels and chips at the grocery store, they would literally be gone by bedtime the night we bought them. Seth and I = no snacking self control.

Hence the usual lack of bagels in the house.

If you are also on that train with us, you can use this delicious cream cheese for things other than bagels! Dip veggies into it. Use it as a spread on your sandwich. Buy healthy, whole grain bread and slather it on there. The possibilities are endless, people. ENDLESS!

I graced some of my students today with my version of the chorus, effectively sticking the song into their head on repeat for the rest of the day.

The song is bad, but man it sure can stick in your head and play over and over again relentlessly.

But fo reals…Frriiiddaaayyy woohoooo!!!

So how was your week? Do you have fun plans for the weekend?

Other than cooking for the blog, we are pretty much planning on taking it slow and relaxing.

We got a new couch, which makes relaxing much more fun :). It is quite comfy.

New furniture is fun.

However… I will say that for some reason we decided that it was a good idea to purchase a cream colored couch when we have a black dog. A black German Shepherd mix. Who are aptly nicknamed “German Shedders.”

Cream couch. Black dog.

Good plan.

It’s okay. We will just get one of those furniture pet hair remover things and use it every ten minutes for the rest of forever.

Loaded Veggie Cream Cheese

Ingredients

Scale
  • 1 carrot, peeled and diced
  • 1/2 cucumber, peeled and diced
  • 1/2 red pepper, diced
  • 4 green onions, sliced
  • 1/4 cup edamame beans (removed from their pods)
  • 1/4 – 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 8 oz reduced fat cream cheese

Instructions

  1. Add all the vegetables into the food processor and turn it on
  2. Process the vegetables until they are all finely chopped/grated
  3. Add the vegetables to a medium bowl
  4. Stir in the cream cheese, salt (to taste), onion powder, and garlic powder
  5. Stir to combine
  6. This gets better after it sits in the fridge for a while – it’s a great make ahead recipe!

    I’ve never thought to flavour cream cheese- genius! Can imagine it tastes absolutely divine especially on bagels. Unfortunately I am exactly like you and daren’t buy them for self-control reasons butshall experiment with vegetables and spelt crackers!

    I love veggie cream cheese! If I’m feeling savory for breakfast, I love a sesame seed bagel DOUBLE toasted with veggie cream cheese. My bagels must be double toasted, I hate barely warm and barely crispy bagels. I buy mine at the store, but now I can make my own!
