Do you guys find yourself craving healthy, fresh things like fruit and salad if you’ve had a few days of unhealthy eating? This happens to me biiiiiig time. If I’ve had some meals over the last few days that aren’t exactly packed with nutrition (i.e. pizza…burgers…nah mean?), I end up having this deep desire for crunchy, fresh salads and bright, tangy fruit.
That was me this weekend. On Friday I had dinner with my sister, and we went out and got a burger and fries at this place called Freddy’s, which I will DESPERATELY miss when we move away from Kansas. On Saturday, my husband and I ordered pizza for lunch. By the way, for some reason pregnancy has cursed my body’s reaction to pizza. It makes me feel AWFUL after I eat it. I get super bad heartburn and my stomach just feels urky and uncomfortable for pretty much the rest of the night.
Buuuttt after a few weeks, my mind forces itself to forget that pizza makes me feel this way, I convince myself it’ll be fine, and I go to town on some more pizza. Repeat fo-eva. This shows my deep love of pizza. It runs so deep…
Anywho – after eating a few pretty greasy, unhealthy meals, I was feelin’ some serious salad and fruit action on Sunday. Which is how this fruit salad was born.
This fruit salad takes regular, boring-ish fruit salad to the next level. Instead of just throwing some fruit together into a bowl, we add some delicious chopped herbs to the fruit and a tangy/sweet honey lime dressing.
If you think it sounds super bizarre to add herbs to fruit, don’t knock it till you try it! I actually LOVE the combination of basil and fruit. Have you ever had peaches and basil? LOVE. One of my favorite combos ever. And it’s good in this mixed berry salad, too. Mint is paired with fruit all the time, so that one might strike you as a little less strange.
We don’t mix an overbearing amount in with the fruit, just about a tablespoon of each. It makes the fruit salad super yummy and adds a layer of unique and complex flavor. My personal favorite part of this fruit salad, however, is the honey lime dressing. It only has two ingredients…honey and lime…shocker. It’s a super simple dressing/sauce, but it adds just what this salad needs. The tangy/sweet combo coats all the fruit and pulls everything together perfectly.
Dudes. Weather was cray in Kansas yesterday. I’m helping with the play at school right now, so I’m here until about 5:30 to 6:00 every night, and at about 5 it got super SUPER stormy and dark and almost yellow-ish outside, if that makes sense. And then I got PELTED by hail as I was running out to my car and got PELTED by hail when I was running into the doggy daycare place to pick up Boone.
Driving in hail is the loudest thing ever, by the way…I was expecting my car to have thousands of tiny dents all over it by the time I got home, but it wasn’t dented at all, thank goodness. That baby is still pretty dang new.
Kansas weather, man. Kansas weather is an event. Especially during tornado season, which we are coming up on right now I think. Last year during tornado season, I lived on a military base and we had this huge basement/storm shelter that a tornado-pocalypse couldn’t have gotten through. Now we live in a single story house with no basement or safe rooms or anything.
So looks like the five of us will be cuddling up in the bathtub when those sirens start going off over the next few months…this does not fill me with a sense of comfort 😬😳. By five of us, I mean Seth, me, Boone, Blitz, and the baby in ma belly. The baby and cat won’t take up much extra space, so maybe we can all fit…I’ll fill you in after the first tornado.

*The herbs, lime juice, and honey are “free”*
PrintHerbed Mixed Berry Salad

- Prep Time: 15 mins
- Total Time: 15 mins
- Yield: 5 servings 1x
Ingredients
- 6 oz raspberries (1 heaping cup)
- 6 oz blackberries (1 heaping cup)
- 6 oz blueberries (1 heaping cup)
- 1 pound of strawberries, green tops removed, berries sliced in quarters (about 3 cups)
- 1 tablespoon minced mint
- 1 tablespoon minced basil
- For the dressing:
- 2 tablespoons lime juice (about 1 lime)
- 1/2 teaspoon honey
Instructions
- Add all the fruit and herbs into a medium/large bowl
- In a small bowl, whisk the honey and lime juice together
- Pour the dressing over the fruit and gently fold everything together until completely combined
