Um…what happened in November…?
I feel like November passed in three days. Guess how many times I posted in November? GUESS?!?!
Four. Four times. Whoops. I’m sorryyyyyyyyyyy. I don’t even know what happened.
Actually I do know what happened. I traveled my FACE off. When you have a full time job and are only able to cook/photograph blog food on weekends, traveling on said weekends makes blogging consistently quite challenging.
Throw a few during-the-week trips and conferences in there, and November just went bye-bye with hardly any recipes for you lovely people.
Apologies…I will try to be better in December, but the reality is this: life be cray-cray right now.
Not in a bad way, just in a busy way!
This recipe actually fits into our “crazy-life” theme today for two reasons.
- It is SO EASY. Really, super, shouldn’t-even-be-posted-as-a-recipe-but-I’m-doing-it-anyway easy. Three ingredients, one hand blender (or spoon…whatevs), and one delicious, flavorful yogurt.
- I came up with this recipe because I was having a crazy
dayweekmonth and needed a quick, healthy breakfast that I could eat while standing in front of the open fridge before running out the door. Should I wake up thirty minutes earlier in the mornings? Yes…probably yes.
The creation of this recipe happened as I was idly reading the ingredient list on a cup of strawberry Greek yogurt and noticed a pretty high level of sugar and some other artificial ingredients. I was thinking to myself, it would be so easy to add some honey and vanilla to a cup of Greek yogurt and have a natural, healthier version in the fridge.
So I tried it out, and it was yummy! It has been a very delicious and quick breakfast in the morning, sometimes by itself, sometimes with a little granola sprinkled on top (and by “some,” I mean a lot…and by “granola” I mean chocolate granola).
I used a hand mixer for this to be sure that the honey was totally incorporated into the yogurt, but you can use anything you want: spoon, whisk, hand, face…whatever floats your boat.
I’m trying to think if anything interesting has happened since the last time I posted a billion years ago…
Boone is all recovered and good to go! In the last update I gave you, he had chewed through his bandage, and I took him to the vet to be boarded there until he was healed just in case he chewed through it again.
HA! I laugh that the phrase “just in case” was ever in our vocabulary. I got a call every. single. day. from the vet saying the following: “Hiiiii, Annie. We are just calling you with another quick update that Boone chewed through his bandage today…we cleaned it, dried it, and changed it again. Just wanted to let you know!”
The phone call wasn’t always the same…sometimes they were notifying me that he had chewed through it three times that day instead of once. Sometimes they were notifying me that he chewed through his stitches and they basically had to redo everything, starting his recovery time over. Ugh…it has been a stressful few weeks.
They tried so many things:
- A bigger cone
- DUCT tape over his bandage
- Sedatives
- More sedatives…
- An even bigger cone made for HUGE DOGS (this is what ended up working)
They now use Boone’s name as an adjective in their office to describe annoyingly determined people/animals…I need to go buy all of them a Starbucks gift card for dealing with my crazy dog for so long.
Aaaanyway, it’s mostly over now. After a lot of time and a lot of money…Basically I should’ve just asked my school to sign my paychecks to Animal Doctor for the last few months and take out the middle man ?…
To sum it up….life is crazy. Make some three ingredient yogurt.

- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 8 1x
Ingredients
- 32 oz Greek yogurt
- 2 teaspoons vanilla extract (more to taste)
- 3–4 tablespoons honey (more to taste)
Instructions
- Combine ingredients in a medium bowl and beat together with hand mixer (if you don’t have a hand mixer, a whisk or spoon will work too)

I love the simplicity of this yogurt…especially since I have every item needed in my fridge…I’m making this for my breakfast tomorrow…thanks! And life does get busy sometimes…you do what you can and enjoy every minute of it – with or without posting!! Sometimes I wish we would cut our posts down – it can definitely get exhausting keeping up! Anyway, glad your pup’s doing better! :) :)
