
At this point, I’ve had my Instant Pot for a year + a few months, and I am still SO OBSESSED. It is one HUNDO P my favorite kitchen item, and I get excited when I think of ways to use it.
I really can’t say enough about this beautiful pot of magic, but if you are on the fence about getting one, you should – for sure, for sure, for sure. I’m in love. And this green chili chicken is the perfect example why! All we do for this recipe is throw some chicken breasts into the Instant Pot with a jar of salsa verde and a can of green chilis. That’s actually it, no joke.
And after that essentially zero effort prep and short cook time, you have soft, moist, juicy, flavor PACKED shredded chicken that is looking up at you from the Instant Pot and begging to be loaded shamelessly into a taco. How can you deny that beautiful chicken goodness?

The depth of flavor here that comes from only THREE ingredients is just straight up cray cray. It’s because everything is pressure cooked together, essentially giving it the flavor and moisture of chicken that was slow simmered for hours.
The flavors of the cooking chicken release into the sauce that is made from the salsa verde and green chilis, and the sauce cooks into the chicken, giving everything so much flavor.
And then when we pull the chicken out and shred it, we throw it right back into the sauce where it stays until you want to use it, whether that be right away, later that day for dinner, or later in the week for a meal. This is a fantastic make ahead meal.

This chicken is the ultimate base ingredient, meaning that it’s something that you can make at the beginning of the week and use for a million different things. Or it can be part of your weekly meal rotation but you use it for something different each time to keep things interesting.

It is legit one of my favorite things ever. I don’t often repeat recipes just because I am always recipe testing for the blog, but I can guarantee this chicken is going to be making a regular appearance because of its INSANE simplicity and fantastic flavor.
You could so easily keep chicken in your freezer + a few jars of salsa and a few cans of green chilis in your pantry and throw this together whenever you need a quick weeknight meal.

Instant Pot Green Chili Chicken

- Prep Time: 1 minute
- Cook Time: 13 mins
- Total Time: 14 minutes
- Yield: 8 servings 1x
Ingredients
- 4 chicken breasts
- 16 oz jar salsa verde (or tomatillo salsa)
- 4 oz can green chilis, not drained
Instructions
- Season your chicken breasts with salt and pepper and add them to the Instant Pot
- To this, add your salsa and green chilis
- Stir to combine, and cook on manual high pressure for 5 minutes with an 8 minute natural release
- Quick release the rest of the pressure, remove your chicken breasts, shred them, and add the shredded chicken back into the sauce until ready to use!

Total cook time doesn’t account for the time it will take the IP to come to pressure.
