Chicken Bacon Ranch Lettuce Wraps (Keto, Paleo, Whole 30)

Why is chicken bacon ranch one of those combinations that just hits the SPOT anytime you eat it? I can’t answer that for you, but I know that I’m here to participate in this delicious combination frequently. I’m heerreee forrrrr ittttt.

The chicken is flavorful and juicy, the bacon is crispy and savory, and the ranch is creamy and adds such delicious flavor to the whole thing. To add some extra goodness, I like to pile a bed of arugula under everything, which I highly recommend. Highly…recommend…

I use a homemade ranch recipe that my neighbors gave me for this, and it is SO SO SO good – best ranch I’ve ever had (I’ll link to it in the recipe), but you can either use your own homemade recipe or just grab some store bought stuff if you want the quick easiness of that.

However…homemade ranch is sooooo much better than store bought, so if you’re willing to do a few extra super simple steps, I’d go for it.

Keto meals like this are the best! You still get the fat that you need, but it doesn’t feel heavy and greasy. It feels fresh and savory and healthy, and I love that.

This is perfect fresh spring and summer meal, too. You know when it’s gorgeous outside and you crave something fresh and crisp that matches the weather? This is THAT.

And the weather here lately in North Carolina…ohhhh my LAWD. It has been perfection. Man, it just makes me want to be outside all day frolicking and stuffing my face with lettuce wraps, nahmean? We have basically been outside from nap through dinner time constantly from the last several days.

Yesterday and today specifically. Not too hot, not too cold…the best.

If you’re in the gorgeous weather boat too, celebrate with these delicious lettuce wraps. If you aren’t in the gorgeous weather boat, make these wraps to make you feel better about that 😌. See? It’s a win-win.

Ingredients

Scale
  • 1 pound bacon, chopped up
  • 6 chicken thighs, trimmed
  • 1 small box baby arugula
  • A few hearts of romaine lettuce
  • Homemade ranch (I LOVE this recipe!)

Instructions

  1. Season your chicken thighs with salt and pepper and grill until cooked through
  2. In a large skillet, cook your diced bacon until crispy and rendered. Set the bacon aside to drain over several layers of paper towels
  3. To assemble, start with a romaine lettuce leaf, pile a handful of arugula inside, top with chicken, sprinkle bacon over top, and drizzle your ranch. That’s all there is to it!

Notes

You can use store bought ranch if you want, but I am a BIG fan of homemade!
