
Oh, hello there spring. I’m feeling you slap me across the face with your wonderful springiness as I look at pictures of this delicious chicken. Does it get more springy than this dish? Delicious, juicy grilled chicken loaded up with ripe tomatoes, fresh basil, garlic, and bright balsamic vinegar.
It’s the ideal meal to help us welcome this wonderful, springy season!
I am extra excited for spring this year now that we live in North Carolina. In Kansas, you do get spring, but it doesn’t last as long as it does here. Spring is in full blast in NC right now, the tree in our back yard is blooming like crazy, and the weather is perfect! I’m living for it.

Bruschetta is one of my all time favorite things to eat in the whole world, and – shocker – it turns out that it’s freaking amazing loaded onto grilled chicken too! It’s this perfect, summery, refreshing topping that brings a beautiful acidic freshness to your grilled chicken.
It’s basil-y, garlic-y, and wonderful!
It’s also easy. The hardest part is chopping all of your tomatoes, and once that slightly tedious step is done, you are in the home stretch. Mix in the rest of your bruschetta ingredients, throw your chicken on the grill, and then devour with the ferocity of ten humans. The end.

The only unfortunate thing about the beginning of spring is that it marks the beginning of landscaappiinnggg (aka mowing the lawn). Mowing the lawn is not on my list of favorite things to do.
Usually Seth does it, but I like to get it done during the week when I can so he doesn’t have to use a big chunk of his weekend day to mow the lawn instead of hang out with us.
Our yard isn’t huge, so it doesn’t take more than an hour to mow, but still…not my fave thing. Our yard here is SO pretty with the super flowery trees and things, so I am kind of wanting to use that as inspiration to plant flowers around the mailbox and maybe some in the back yard…but we will see.
Maybe I’ll just stay content with our flowery tree in the back yard.
MAN I sound old and domesticated in this post. I’m going to just stop here. One last thing: make sure you eat this chicken ASAP because you NEED it in your life!

Bruschetta Grilled Chicken

- Prep Time: 15 mins
- Cook Time: 15 mins
- Total Time: 30 minutes
- Yield: 4 servings 1x
Ingredients
- 4-ish pounds tomatoes (6 cups diced), quartered, pulp scooped out, and diced
- 15–20 basil leaves, sliced
- 3 cloves of garlic, minced
- 1 1/2 tablespoons balsamic vinegar
- 4 chicken breasts
Instructions
- Add your diced tomatoes, basil, garlic, and balsamic vinegar to a large bowl. Season to taste with salt and pepper
- Set aside while you grill your chicken
- Set your grill to medium high and let it heat up. Season your chicken with salt and pepper, and grill for about 6 minutes per side or until the chicken is just cooked through
- Let the chicken rest for at least 5 minutes, top with your bruschetta, and you’re ready!
