Bruschetta Grilled Chicken

  • 4-ish pounds tomatoes (6 cups diced), quartered, pulp scooped out, and diced
  • 1520 basil leaves, sliced
  • 3 cloves of garlic, minced
  • 1 1/2 tablespoons balsamic vinegar
  • 4 chicken breasts


  1. Add your diced tomatoes, basil, garlic, and balsamic vinegar to a large bowl. Season to taste with salt and pepper
  2. Set aside while you grill your chicken
  3. Set your grill to medium high and let it heat up. Season your chicken with salt and pepper, and grill for about 6 minutes per side or until the chicken is just cooked through
  4. Let the chicken rest for at least 5 minutes, top with your bruschetta, and you’re ready!
