It’s the first pumpkin recipe of the season!!! Ah, fall food makes me so happy. Pumpkin, caramel apple, cinnamon, nutmeg – doesn’t it all just make you feel warm and fuzzy inside? What is it about fall that makes you feel that way? It’s like a feeling of nostalgia, but I don’t even remember doing anything particularly special during fall while growing up. Who knows – it’s a mystery. But one that I embrace fully 🍁❤️🍂.
Ironically, pumpkin isn’t even a favorite flavor of mine…confessions. If it’s overused or too strong in a recipe, then it ruins it for me! Things like Pumpkin Bread, Pumpkin Cookies, or this Skinny Pumpkin Alfredo = YES. Things like Pumpkin Pie? Surprisingly too much pumpkin for me. I know – I’m a fall loving traitor. Accept me anyway 😣.
This Skinny Pumpkin Cheesecake Mousse falls into the category of YESSS pumpkin recipes, meaning that there is pumpkin flavor, but it’s subtle enough and mingled with enough yummy fall spices (i.e. cinnamon, nutmeg, etc…) to fill my fall love bank while not overwhelming me with pumpkin flavor.
Also…there’s a cheesecake flavor goin’ on in here too, which just makes everything better, wouldn’t you agree?
So how does one make a pumpkin cheesecake mousse “skinny”? Good question. The answer is fat free cool whip…GASP. This is never something I’ve used before…and I was slightly ashamed while spooning it out in hearty amounts, but then I tasted the final product and forgave myself while shoving multiple large spoonfuls into my mouth. By spoonful number four, I was completely forgiven. Usually I am a BIG homemade whipped cream fan. It’s easy to make and SO much better than store bought. But this recipe would be far higher in fat and calories if we went with the traditional homemade whipped cream, so we used a little low-fat cheat.
Almost a month ago, my sister-in-law and I started doing Weight Watchers. We both just had babies, so we jumped into Weight Watchers together to lose dat baby weight, yo. We were planning on doing the 21 Day Fix again, but Weight Watchers is waaaaayyy with a capital “W” easier to fit into our days with babies.
Anyway, Weight Watchers is big into low fat foods. Low fat foods tend to have pretty few points. 1/3 cup of this mousse is only 4 smart points, so it’s a nice, relatively low-point little treat! Tasty enough for me to forgive my own use of fat free cool whip 😳. (It’s surprisingly yummy, by the way. I was pleasantly surprised.)
There are a few ingredients in this mousse that make it super extra fall-y aside from the pumpkin (which is obvious).
- Pumpkin pie spice. So you can totally make this yourself if you have the ingredients in your pantry (it’s mostly made up of cinnamon, nutmeg, and clove), but I wanted to make this recipe even easier by just using the pre-mixed spice blend. Killing three birds with one stone, or one spoon 😉.
- Maple syrup. Rather than adding honey or sugar to sweeten this mousse up, we up the fall factor one more notch with some yummy maple syrup. It adds the perfect amount of sweetness and the perfect amount of seasonal goodness 😍.
On top of the awesome seasonalness (not a word) of this recipe, it’s also cray cray easy to make. You literally just throw the ingredients together and mix. The ingredients? There are only five, BT dubs: whipped cream cheese, fat free cool whip, pumpkin, maple syrup, and pumpkin pie spice. Winninggggg 👍.

This is now my second time making this recipe and my hubby loves it! He requested it the second time. We love that it is guilt free because we love our sweets!! I made a few modifications this time, I added more pumpkin pie spice because why not, right?? I also added vanilla extract and instead of maple syrup, I added a little agave and honey for sweetener.
