
Alright people (especially parents), say hello to your new morning bestie! Make one batch of these, and you’ll have a gallon freezer bag full of ready-to-microwave pancake bites. They are fluffy, there is pumpkin spice in every bite, and they are preeeettttyyyy dang cute IMO.
My kids love these – I give them a little pool of maple syrup to dip them in, and they just nom them right up. But even for adults – these are a hit all around! I love pancakes, but I SERIOUSLY hate how it chains me to the stove, pouring, flipping, burning until I get through whatever batter I have. It’s not a fun breakfast to make.

These are my solution – you bake the whole batch up at once, and it leaves you with a bunch of little two-bite pancakes that are just as cute as they are delicious.
It doesn’t hurt my love of this recipe that it SCREAMS fall – between the pumpkin and the pumpkin pie spice folded into every bite, they make my fall dreams come true. AND – they are dairy free, so they’re safe for my little guy.

The process is simple – we start with a pancake mix (I love Bisquick because the mix itself is dairy free. One of the only ones that is!). To this, we whisk in some almond milk, eggs, pumpkin, pumpkin pie spice, a touch of sugar, and vanilla.
Scoop into some sprayed mini muffin tins, bake for a short ten minutes, and you’ve got breakfast prepped for the next several days/few weeks! I love this one, you guys – SO GOOD, so fun, so cute, and so tasty. It’s all I want when I’m pushing through my groggy mornings with all my tiny humans.

These freezable little pancake bites are the perfect quick and easy fall breakfast! Make a batch, freeze them, and have bites of fluffy fall goodness ready to heat up and eat any morning of the week!
- Prep Time: 5 mins
- Cook Time: 10 mins
- Total Time: 15 mins
- Yield: 36 pancake bites 1x
- Diet: Vegetarian
Ingredients
- 2 cups Bisquick mix
- 2 eggs
- 1 cup plain, unsweetened almond milk
- 1/2 cup pure pumpkin puree (not pumpkin pie filling!)
- 2 tablespoons pumpkin pie spice
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- A few pinches salt
Instructions
- Preheat oven to 350 degrees
- Whisk all ingredients together in a large bowl
- Spray your muffin tin(s) with cooking spray and scoop one tablespoon of batter into each tin
- Bake for 10 minutes
- Let cool for a few minutes. To remove, twist each pancake bite just a little and lift – they should pop right out!
- Serve with maple syrup for dipping!
Notes
These freeze super well! Freeze and then when ready to use, wrap 4 or so (or however many you want – you just may have to adjust microwave time) in a paper towel and microwave for 30 seconds.
