Can I confess something to you? I know you won’t tell anyone. For my entire life – every single day of my entire life – I thought barbecue was spelled barbeque. When did I come to the realization that this is, in fact, false? I’m glad you ask. It was about five minutes ago.
I had made my Pinterest image and everything (that I put at the bottom of each post) with barbecue spelled with a “Q.” Let’s just talk about this for a minute. You may be judging me right now. You may be thinking “Aren’t you a food blogger and an English teacher? Shouldn’t you know how to spell a wildly popular condiment title correctly?” To answer your question, yes. Yes I should. I am quite shocked and dismayed that I have been spelling it wrong for my entire life. Let me present you with my one piece of logic that hopefully gives me a slightly decent excuse for my confusion.
The abbreviation. The abbreviation for barbecue is BBQ. BB–QQQ—. Whatup? I know that makes sense phonetically, but still. This excuses my twenty-four years of typos, right? I’m going to safely assume that you are all nodding at your computers/phones/tablets as you read this. I knew you’d understand – you da best.
And now that I have confessed my secret to you, we can talk about this delicious barbeCue chicken skillet. This skillet is modeled after the classic BBQ chicken pizza. One of my all time faves.
- Chicken
- Barbecue sauce
- Red onions
- Cheddar cheese
That’s it. Those are the four ingredients that make up your classic BBQ chicken pizza, and they taste SO AWESOME together. If you haven’t ever had BBQ chicken pizza before, you need to make that happen. Actually, on second thought, just make this skillet instead. It tastes just as good, you can make it at home, and it’s much better for you. Barbecue chicken skillet – 3, barbecue chicken pizza – 0. Looks like it’s pretty obvious what the right decision here is, people.
And what makes this recipe even better, on top of the delicious, mouthwatering flavor? It takes less than thirty minutes to make, and it’s a one pot meal. Yaasssssssssss. You will be surprised that it only took thirty minutes and one pot to make when you taste the end result ???.
So, our one pot process – easiest thing ever:
- Cook sliced red onions for a few minutes.
- Remove to a plate. Add quinoa and chicken stock. Simmer for fifteen minutes.
- Add red onions, chicken, BBQ sauce (Sweet Baby Ray’s is the most BOSS store bought sauce eva), and cheese.
- Stir. Eat. Put leftovers in fridge. Come back five minutes later because you want
oneeleven morebitebites.
There is a bit of optional variation in step three. You can either stir all the cheese in at once, or you can stir in half the cheese, sprinkle the rest over top, and broil in the oven until melty and delicious. Either way is yummy.
Okay, people. Good news. The intensive house cleaning process that has been happening the last several days is DONE. And oh my goodness, my house is clean. And it’s amazing.
This isn’t just your average “spring cleaning.” This is like the cleaning you do when you move out of your rented house/apartment and have to make it look perfect or you will get charged eighty bucks for a scuff on the wall. But this is WAY more fun because we actually get to keep living here once it’s crazy clean rather than moving out, woop woooooopppp. Hello perfectly organized pantry and OCD perfect closet, you are my new best frands.
Now everything is ready for Seth to come home! He will appreciate the clean house, but he will more so appreciate home cooked food again ??. He is so much fun to cook for because he loves everything. You basically feel like a master chef when he eats your food ??. He’s far more responsive than Boone, at least, who has been my main audience throughout this deployment…

Print30 Minute One Pot Barbecue Chicken Quinoa Skillet

- Prep Time: 10 mins
- Cook Time: 20 mins
- Total Time: 30 mins
- Yield: 4 1x
Ingredients
- 1 small red onion, thinly sliced
- 1 teaspoon olive oil
- 1 cup uncooked quinoa
- 2 cups chicken stock
- 1 cup shredded rotisserie chicken
- 1 cup shredded cheddar cheese
- 1/2 cup barbecue sauce (I use Sweet Baby Ray’s)
Instructions
- In skillet, heat 1 teaspoon of olive oil over medium high heat
- Add your sliced red onion, season with salt and pepper, and cook until the onions have softened
- Remove the onions to a plate and, in the same skillet, add your quinoa and chicken stock
- Bring to a boil, cover, reduce to a simmer, and cook for 15 minutes
- When the fifteen minutes are over, fluff the quinoa with a fork. To the cooked quinoa, add your rotisserie chicken, red onions, and barbecue sauce – stir to combine and season to taste with salt and pepper
- You can do one of two things with the cheese: 1. Add the entire cup into the quinoa mixture, stir to combine, and serve. 2. Stir in half the cheese, top the quinoa mixture with the other half, and stick under your broiler for a few minutes until melty. Both of these methods work well and will taste just as yummy!
