30 Minute One Pot Barbecue Chicken Quinoa Skillet

  • 1 small red onion, thinly sliced
  • 1 teaspoon olive oil
  • 1 cup uncooked quinoa
  • 2 cups chicken stock
  • 1 cup shredded rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup barbecue sauce (I use Sweet Baby Ray’s)

Instructions

  1. In skillet, heat 1 teaspoon of olive oil over medium high heat
  2. Add your sliced red onion, season with salt and pepper, and cook until the onions have softened
  3. Remove the onions to a plate and, in the same skillet, add your quinoa and chicken stock
  4. Bring to a boil, cover, reduce to a simmer, and cook for 15 minutes
  5. When the fifteen minutes are over, fluff the quinoa with a fork. To the cooked quinoa, add your rotisserie chicken, red onions, and barbecue sauce – stir to combine and season to taste with salt and pepper
  6. You can do one of two things with the cheese: 1. Add the entire cup into the quinoa mixture, stir to combine, and serve. 2. Stir in half the cheese, top the quinoa mixture with the other half, and stick under your broiler for a few minutes until melty. Both of these methods work well and will taste just as yummy!
