How To: Salad Dressing + 3 Recipes

Alright people, the following information his crucial: THERE IS ZERO REASON TO BUY PRE-MADE SALAD DRESSING EVER. Reasons:

  1. Homemade tastes a million times better (that is an exact statistic…one million times better)
  2. Homemade is super easy to make
  3. Homemade is way healthier and has no refined sugar + preservatives + extra chemicals

But most importantly, again, it really does taste so much freaking better. Sometimes homemade salad dressing can be intimidating to people, but those are people that just don’t know the ridiculously easy formula it takes to make salad dressing.

Formula: one part acid + two parts oil + emulsifier + tasty extras = yummy dressing.

Now you can go even more simple than this and literally just do oil and acid, but I think at the bare minimum you should add an emulsifier to make it come together as one uniform liquid. And the tasty extras just make things…tasty πŸ˜‰. Let’s break this formula down…

Acid = citrus or vinegar (lemon, lime, orange, balsamic vinegar, red wine vinegar, etc…).

Oil = I always use olive oil.

Emulsifier = Dijon mustard is BAE. Works like a charm. Mayo also works well.

Tasty extras = garlic, fresh herbs, spices, honey, etc…

And that’s it, yo. Whisk it up, shake it up, pour it over your salads and go to dressing heaven. Now if you’re wanting a creamy dressing, you can add a scoop of mayo as your emulsifier instead of dijon, and you have a creamy, dreamy dressing, which I’m also a big fan of. The possibilities are endless. ENDLESS. Here’s your video!

The first dressing shown here is lemon dijon. This is probably my go-to salad dressing that I use the most. It is seriously delicious and I LOVE it on kale salads – particularly this one 😍!

Lemon Dijon Vinaigrette

Ingredients

Scale
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • Small squeeze dijon mustard (1/2 – 1 teaspoon)
  • 1 clove garlic, finely minced
  • Salt and pepper to taste

Instructions

  1. Mix everything together and whisk it thoroughly or shake it up in a mason jar.

The next recipe in the video is a honey lime vinaigrette – super perfect for any Southwest style salads you are making!

Honey Lime Vinaigrette

Ingredients

Scale
  • 2 tablespoons fresh lime juice
  • 1/4 cup extra virgin olive oil
  • Small quirt dijon mustard (1/2 – 1 teaspoon)
  • 1 clove garlic, finely minced
  • Small squirt honey (about 1/2 – 1 teaspoon)
  • Cilantro, finely chopped (about 1 tablespoon)
  • Salt and pepper to taste

Instructions

  1. Mix everything together and whisk it thoroughly or shake it up in a mason jar.

This last one is a balsamic vinaigrette, and it just absolutely perfect on everything!

Balsamic Vinaigrette

  • 2 tablespoons balsamic vinaigrette
  • 1/4 cup extra virgin olive oil
  • Small quirt dijon mustard (1/2 – 1 teaspoon)
  • 1 clove garlic, finely minced
  • A few pinches dried oregano
  • Salt and pepper to taste
