These meatballs, these meatballs, these meeaattbbaalllllssssss. Question: why don’t we eat meatballs for every single meal every single day? Answer: because we don’t make good life decisions. Meatballs are SO GOOD. They are just so good. And the awesome thing about them? You can literally do a million different things with them. Correction…a million and one things.

I’m going to be straight up with you guys – I’m not sure you can find a better meatball recipe than these chicken meatballs with Thai curry sauce. I mean, they are UN-real. Unreal. The meatballs are so juicy and flavorful, and the sauce…I just can’t. I just….can’t.

Here’s what I want to do with this sauce…I want to bottle it and bring it with me everywhere I go. I want to put it on literally every piece of food I ever eat for the rest of my life. I’ll become known for it. Annie and her bottle of curry sauce. Some people bring purses everywhere they go, I bring my bottle of curry sauce. And life is good.

Have I mentioned how easy this sauce is? How easy the recipe is in general, actually. The meatballs include a small handful of ingredients: ground chicken, one egg, whole wheat bread crumbs, and salt/pepper. Boom. Roll em out. Bake em up. Stir around in Thai curry sauce and then DIE AND GO TO MEATBALL HEAVEN.

The sauce: garlic, scallions, ginger, red curry paste, coconut milk, and chicken stock. Simmer for a little bit. DIE AND GO TO CURRY SAUCE HEAVEN.

As for the curry paste – months ago, I researched the most delicious and authentic curry pastes you can buy, and I ended on this brand. I have used it in several things, and it is absolutely fantastic. I keep it in my freezer and use it whenever I feel the curry craving knocking (……every day). It never freezes to be rock hard – it is always “spoonable,” so you don’t even have to pre-plan and thaw. Myyyyyy kinda thang.

Just one little tablespoon of this magic paste will transform any dish into Thai heaven. I love it.

Another fun thing about this recipe: it gets better as it sits in the fridge. I made these meatballs this past weekend and have eaten them three times since for either lunch or dinner. And they just get better and better each day I wait ?. So, if you are a left overs fan (yyyyyyaasss, leftovers = lyfe), this is THE perfect recipe for you!!

Okay, so on a far less cheery note…I must tell you about something so sad that happened this week. Sometime recently (maybe last week or the week before?) I told you guys about this dog, Ike, that I met at doggie daycare and was thinking about adopting. He and Boone are daycare besties, and he was being fostered by a lady who works at the daycare.

Well, we decided to go through with it and took him home for a trial week last Wednesday. You guys, this dog is THE SWEETEST animal I’ve ever met. Like, cuddles so hard that the word “cuddle” is redefined in the dictionary. And instead of the new definition being made up of words, it just has a picture of Ike. I totally fell in love with him. I was thinking that he and Boone would play all day and wear each other out so they would be nice and calm(ish) at night. Well, that is just zero percent what happened.

They fed off of each other’s energy and just went CRAZY allllllll day and very late into the middle of the night. For an entire week straight. My sister-in-law and brother are moving here in a few weeks, and they have an (almost) two-year-old daughter. I need to be able to bring my dog(s) to her house without fear of them pummeling her. Not to mention the fact that it was super stressful to have two dogs going insane on each other all day in my small house, especially because their favorite thing was to play ON TOP of me…I definitely got a few bites and head butts thrown at me over the seven days.

So I had to give him back after our trial week was over ???. OH MY GOSH it was horrible. He is such an amazing dog – it just wasn’t working out with he and Boone together. They got along a little bit toooooo well…

So that is my sad news…sad, sad, sad. I did have a large plate of these meatballs waiting for me when I got home, though. And that helped ?.

For you 21 Day Fix people, here are your container amounts:

  • 1 red container (chicken)
  • 1 blue container (coconut milk)
  • 1/4 yellow container (whole wheat bread crumbs)
  • 1/2 teaspoon (olive oil)

*The ginger, garlic, curry paste, and basil are “free.” The chicken stock, green onions, and almond milk would usually count for container amounts if we used more of it, but because we use so little of each, it’s not even worth counting.*

Ingredients

Scale
  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup whole wheat panko
  • 1 teaspoon salt
  • 2 teaspoons fresh grated ginger
  • 1 clove garlic, grated
  • 3 green onions (white and green parts), finely minced
  • 1 tablespoon red thai curry paste (I like Mae Ploy brand)
  • 1 cup coconut milk
  • 1 cup chicken stock
  • 1/4 cup unsweetened original almond milk
  • Basil leaves (for garnish)
  • 2 teaspoons of olive oil

Instructions

  1. Preheat oven to 350 degrees
  2. In a medium bowl, mix together the ground chicken, egg, salt, pepper, and panko
  3. Form into balls (this recipe makes four servings, so I quartered the meatball mixture and made each quarter into 4 meatballs. You can make yours bigger or smaller based on preference, just keep in mind that 1/4 of the meat will be your serving size, which is 1 red container)
  4. Bake meatballs for 10 minutes, remove from the oven, flip, and bake for another 5 minutes
  5. For the sauce, add 2 teaspoons of olive oil to a large skillet over medium high heat
  6. Add your ginger, garlic, and scallions and cook for a few minutes
  7. Add your red curry paste in with the veggies and stir until everything is combined
  8. Add your coconut milk and chicken stock. Stir until everything is combined
  9. Bring to a boil and reduce to a simmer. Simmer for 15 minutes, stirring occasionally, or until the sauce has thickened
  10. Turn off the heat and stir in your almond milk
  11. Season to taste with salt and pepper
  12. When the meatballs are done cooking, add into the sauce and stir around so the meatballs are coated
  13. Top with fresh sliced basil

    Hi! I love your blog and recipes, they are amazing! I’m currently finishing up some brown rice skillet lasagna as I go through planning my next meal…

    Quick question: it says 1 blue container for the coconut milk, but I looked it up and it says that 8 ounces of coconut milk would be 1/2 blue. I think per serving this would be 4 ounces coconut milk, so 1/4 blue. Or maybe I’m missing something??? Just don’t want to lose my precious blue container ;)

    I had these for my first day of my 31 day fix. These were just as amazing as I hoped they would be. I served them with a side of steamed asparagus which I dunked in the sauce. Even better, my hubby liked them and watched to have them as lettuce wraps!

    I made this tonight and put it over an entree salad, with the sauce as a dressing, it was wonderful! It took quite some time for the sauce to thicken, and it remained quite thin — can I ask if you used canned coconut milk or the drinking kind from the box?

      Great idea to put it over a salad! Even after “thickening” the sauce remains relatively thin – which is characteristic of a curry sauce. Good question – I used canned coconut milk! The sauce will thicken a bit more as it cools, too, if that helps. I’m glad it turned out well for you, Kimberly!

    Hi Annie! I am doing Whole30 and so everything in this recipe works except the breadcrumbs. Do you think omitting them will completely destroy the ability to make meatballs? Any thoughts/ideas?

      Good question, Whitney! I think you will be okay without the breadcrumbs. It will change the texture, but they will still be yummy. Let me know how it works out for you without the breadcrumbs!

    What’s the purpose of the almond milk? Could u just use extra coconut milk? Or cows milk instead? TIA

      The only purpose is that it’s a bit healthier and lower in fat/calories. Regular milk would work just fine! Good question!

    Now this may be a very silly question but I’m just getting started with the 21 day fix. I see you mention the container amounts but if I’m mixing this all together I won’t be able to measure those out. It mentions 4 servings so is it ok to just split this up into 4 equal meals and I’ll be getting the correct portions?

      I would probably pair it with some brown rice and maybe roasted broccoli? You could also have it with a simple side salad with asian dressing. There are many options, so let me know if neither of these sound good. I’m so glad you are trying it – they are suuuuper YUM!
