THESE ARE THE BEST THINGS EVER!!
As you all know by now, I am not a baker. Desserts are not my strong point, so I had very little faith that these little cuties would turn out well. But they were ammmmaazziinnngggg.
I’m not sure how much credit I can actually take for these since I used pre-made pie crust and canned apple pie filling (….I am shameful). Does this even count as a recipe if those were the two main ingredients I used?
Well, either way…these cookies are super easy and SUPER DELICIOUS.
That cinnamon whipped cream….man. I’m tellin’ you. Soooo good ?.
I am making them for Thanksgiving this year instead of a traditional pie!
The only challenging element of this recipe is the lattice crust that lays across the top. Challenging probably isn’t even the right word to use. I would say it’s more “time consuming” than “challenging.”
Seth helped me with that part, and we knocked it out pretty quick! Once you have that little tedious step out of the way, it is so satisfying to cut the cookies into little circles and slide them onto a baking sheet. So pretty!
These cookies totally embody the taste of fall, so obviously I am obsessed. They were so fun to make and even more fun to eat!
And here’s the thing – if you have any baking skill (unlike me) and want to be legit, make your own crust and filling! Go for it!! It would be even better…if that is even possible. But if you are lazy or baking just isn’t something you enjoy, use this shortcut-store-bought-ingredients-version! I promise it’s still SUPER yummy ?.
If you aren’t usually a fan of canned pie filling in actual pies (ME), I wouldn’t write this recipe off just yet. You spread a thin layer of pie filling between the two layers of crust, so you really can’t tell as much that it’s store bought and not made in your grandma’s kitchen ?.
So if you have read any of my posts in the last few months, you probably know that Boone (our dog) has had a broken toe and has been prescribed “strict rest,” which means, of course, that he is SUPER hyper and there’s nothing we can do about it.
This hyper-ness translates into constant chewing of anything he can find. It’s been a really fun few months!
So anyway, we get home from dinner last night, walk in the house, and see that our couch is SOAKED. I mean really, really drenched. We were so confused because there weren’t any glasses or bottles of liquid anywhere nearby that could have spilled.
After looking around and investigating a little bit, we realized that Boone had somehow gotten to a quart of Chicken Stock and ripped it apart on our couch, effectively soaking everything nearby.
So we pull the covers off all the mattresses and cushions and throw them in the wash with about three gallons of detergent.
Chicken stock soaked couch cushions? Um, yeah…that’s gross. We basically bleached them.
We only have one fan in our house, and it’s in our bedroom. We brought the cushions (also drenched) in there and placed them wet side up on our bed as close to the fan as possible, hoping that they would dry out before any mold formed.
At this point we have no bed and no couch to sleep on.
We figured the air mattress would be a good solution, so we popped that baby out and got it all set up.
Little did we know that Boone deems anything that is less than three feet off the ground as his territory, so he was extremely excited that we were down in his area and assumed, of course, that we wanted to do nothing but play throughout the entire night.
Jumping on us at three o’clock in the morning? Sure.
Biting my arms at four o’clock in the morning? Of course!
Licking my face for forty five straight minutes at midnight? Yep.
Needless to say, we got basically zero sleep last night. Thanks Boonie!
The only possible solution I can think of is to make a double batch of these cookies and eat all of them in one sitting as a “pick-me-up.” That’s really the only thing that makes sense.

Apple Pie Cookies with Cinnamon Whipped Cream
- Prep Time: 15 mins
- Cook Time: 15 mins
- Total Time: 30 mins
- Yield: 7 cookies 1x
- 2 pre-made pie crusts (we used Pillsbury, which already comes in a pack of 2)
- 1 21oz can of apple pie filling (we used Comstock)
- 1 egg
- Cinnamon and raw (turbinado) sugar for topping
- For the cinnamon whipped cream:
- 3/4 cup heavy whipping cream
- 1 tablespoon sugar
- 1 1/2 teaspoons ground cinnamon
- 1/8 teaspoon vanilla extract
- Preheat your oven to 400 degrees
- Pour your apple pie filling into a medium bowl and, using two knives, slice the apples up until the filling is a rough puree with only small chunks
- Unroll one pie crust out onto your counter
- Spread a thin layer of apple pie filling over the top, right up to the edges – you won’t use all the filling, but you use most of it (probably about 1/2 cup left over)
- Slice your other pie crust into about 1/2 inch strips
- Using the strips of pie crust, weave a lattice crust over top of the apple pie filling (if you don’t know how to do this, it is easier than it looks! Just look it up on google or YouTube)
- Cut circles out using a cookie cutter or the top of a cup (we used a cup)
- Place the circles on a parchment paper lined baking sheet
- In a small bowl, whisk together one egg with a splash water
- Using a pastry brush, brush a small amount of egg wash across the top of each cookie
- Sprinkle some cinnamon and raw sugar on top of each cookie, and place them in the oven to bake for 10-15 minutes, until the lattice crust on top is golden brown
- Meanwhile, make your cinnamon whipped cream
- In a medium bowl, add the heavy whipping cream, sugar, cinnamon, and vanilla
- Using a hand beater (you can also do this using a Kitchen Aid or other stand mixer), beat the ingredients together until the cream is whipped and forms stiff peaks
- Remove the cookies from the oven, let them cool, and serve with the cinnamon whipped cream!
