Fifteen Quick and Simple 30 Minute Meals

Even those of us that love, love, looooove cooking are fans of 30 minute meals. Meals that are that quick and easy but still pack so much flavor and yumminess are just so much fun to make. Not to mention, MUCH needed on crazy weeknights when you’ve either been dealing with a pack of crazy kids all day, dealing with a crazy day at work…or both…yikes.

So, this roundup is for you, busy weeknight ladies and gents. And my life has been extra crazy and busy lately, so it seemed appropriate that I pull together a tasty collection of recipes for us all to enjoy 😀.

On that note, let’s begin!

1. Chicken Parmesan Pasta Skillet from The Cookie Rookie

That cheese, tho…that cheese. Sign me up for a week of this every single evening, please!

2. Quick and Simple 5 Ingredient Teriyaki Chicken from The Garlic Diaries

This dinner could seriously not be easier. It uses very few ingredients, takes very little time, but still tastes BANGIN’, yo. It’s a must-make for sure.

3. Zucchini Noodle Cashew Stir Fry from Table for Two

I mean, daaang gimme some of them zoodles. It’s hard to get me excited about zucchini noodles – I’m not the biggest fan ever, but I’ll take five bowls of this and keep going. Yes please.

4. Thai Baked Salmon from I Food Real

It took me a while to realize that I actually like salmon. For the longest time, I thought it was just bland and flavorless. Which is probably because I’d just never had an awesome, flavorful piece of salmon. If you don’t season it/marinate it correctly, it can be SUPER bland! But recipes like this are the cure to salmon blah-ness. This salmon looks like it is just exploding with flavor, aaaannddd bonus: it’s Thai flavor. Which just happens to be one of ma faves.

5. Perfect 30 Minute Red Curry from The Garlic Diaries

I’m sorry, but I just have to throw this recipe into any roundup I ever do, ever. Red curry is one of my top three favorite foods in the whole world, and I was working on perfecting this at-home version for FOREVER until I found the best combo of everything. And it is super boss. I ❤️ it.

6. Honey Walnut Shrimp from Closet Cooking

Lookit that crispy, crunchy shrimp.  Makes my mouth water just gazing at it!

7. Simple Sesame Noodles from The Garlic Diaries

These noodles could seriously not be any easier. But they are super tasty! Add veggies and meat to this for an even more complete meal that is still done in under thirty minutes!

8. Creamy Beer Steamed Mussels from Tastes Lovely

I LOVE mussels. I almost never eat them for some reason, but that needs to change pronto. Starting with these delicious beer steamed mussels. YUM!

9. Chicken Stir Fry with Rice Noodles from Natasha’s Kitchen

I. Love. Rice. Noodles. I’m seriously obsessed. It’s something about the texture and the fact that they absorb flavors so wonderfully that just has me swooning over every bowl of them that is put in front of me. And this thirty minute rice noodle stir fry? Um…sign me up.

10. Salmon Burgers with Dill Caper Yogurt Sauce from The Garlic Diaries

Again, this is one of my all time favorite recipes. These burgers were so experimental for me, and they ended up turning out to be far more delicious than I ever imagined. You use fresh salmon fillets that you pulse in your food processor to make these amazing patties – they are so fresh and SO TASTY. And fun to make 😍.

11. Baked Vegetarian Tacos from Feasting at Home

Not only is this recipe SUPER simple, it’ll also cut down on your grocery bill since it’s meatless. Instead of meat, you spread some yummy refried beans inside your taco shell and pile in some shredded cheese before baking. And then the toppings, of course. Go crazy, friends.

12. Three Ingredient Creamy Tomato Shells from Pinch of Yum

That’s right…three ingredients. Pasta, cashews, and tomato sauce. Could life get simpler than that? Could it?? The answer is indeed NO.

13. Simple Kale Salad with Lemon Vinaigrette from The Garlic Diaries

Still to this day my fave salad. It’s everything a salad should be…hearty, flavorful, varied in texture, and DELICIOUS. Once you start in with the kale salads, there’s no goin’ back, man. Kale is the bomb.com. The coolest part of this salad is that it’s sooooo tasty, but it’s SO easy. Like…too easy for how delicious it is…it’s not fair.

14. Thai Chicken Lettuce Wraps from Jo Cooks

Again with the Thai, yaaassssss. Thai food + me = FO-eva.

15. Shrimp and Basil Angel Hair Pasta from Tastes Lovely

And last but definitely not least…this pasta goodness. Super simple, super tasty. And, I mean, it’s pasta…sooo…nuff said.
