There’s also a grocery list for each individual recipe under each picture in case you want to pick and choose just a few. I know meal planning is a DARK EVENT for many of you each week – let me do the work for you!
We try to eat meat only a 2-3 times a week if we can help it (REALLY lowers our grocery budget), so this week’s meal plan has 2 meat meals and 3 meatless. If you want to add meat in, you easily can with any of the meatless meals included in this plan.

Dinner 1: Instant Pot Veggie Bisque

Groceries:
- 1 zucchini
- 1 1/2 pounds cherry tomatoes
- 1 red bell pepper
- 1 onion
- 5-8 basil leaves
- 4 cloves garlic
- 1/2 cup veggie broth
- 1/4 cup olive oil
Dinner #2: Sheet Pan Roasted Salmon with Mediterranean Salsa (we serve this with a salad)

Groceries:
- 1 hot house cucumber
- 1 cup cherry tomatoes
- 1 red onion
- 2 cloves garlic
- 1/2 cup crumbled feta
- 1/4 cup kalamata olives
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 whole salmon fillet (about 2 1/2 pounds)
- 1 tablespoon dijon mustard
- Salad ingredients if you choose to serve it with a salad
Dinner #3: Creamy Roasted Cauliflower Sauce

Groceries:
- 1 head cauliflower
- 4 cloves garlic
- 2 cups veggie broth
- 1/4 cup cashews
- 1 pounds pasta (I like fettucine)
Dinner #4: Roasted Spaghetti Squash with Meaty Vodka Sauce

Groceries:
- 1 pound mild Italian sausage
- 1 onion
- 3 cloves garlic
- 1/3 cup vodka
- 28 oz can whole canned tomatoes
- 1/4 cup raw cashews
- 2 spaghetti squash
Dinner #5: Grilled Veggie Tacos with Cilantro Lime Yogurt Sauce

Groceries:
- 15-20 tortillas
- 2 avocados
- 3 limes
- 2 red bell peppers
- 2 zucchini
- 1 red onion
- 2 tablespoons avocado oil
- 4 ears of corn
- 1 cup nonfat Greek yogurt
- 1/2 cup cilantro

Never though of a veggie bisque before but going to try this out now! Would be interesting with butternut squash too.
