8 Cozy Winter Instant Pot Recipes

Cozy, wintery, cold weather, sit-next-to-the-fireplace-with-a-big-bowl-of-*instertfoodhere* meals are my ABSOLUTE fave. I just love them. That type of food makes me feel warm and cozy inside and just puts me in THE best mood! Yes, sure, fine – fresh, bright summer produce has its place in my heart too, but nothing can beat a straight up cozy meal when it’s crisp and cold outside!

And – bonus – when they are made in an Instant Pot (aka done in two seconds with like zero effort), they are ramped up to an even higher level of awesomeness. There are not enough words in the English language to express how much I love my Instant Pot, but I’ll just say that if you need to find me, I will likely be in a sweater, stuffing each and every one of these meals systematically in my face until early March. Byeeee.

SO – let’s get started – 8 super delicious, super cozy, super-perfect-for-winter Instant Pot recipes just for you, lovely internet friend!

Number 1: Instant Pot Beef Stew

This beef stew is what dreams are made of. Buttery chunks of fall-apart beef, tender veggies, thick, rich, flavor packed gravy/broth…it’s just the absolute best. And it legit does NOT get any cozier or more comforting than this right here, folks 👆🏼.

Number 2: Instant Pot Turkey Pumpkin Chili

Is it too late for pumpkin? I say no! especially when it’s added to a chili like this and simmered away in the Instant Pot, ready to be consumed in embarrassing quantities. Chili is a quintessential cold weather food for me, and I find myself craving it all season long. So THIS will be happening in my kitchen, people…big time, big time.

Number 3: Instant Pot Beef Ragu

Noodles with essentially a meaty marinara sauce may not initially sound like the idyllic “cozy winter meal,” but this recipe…it’s so, so much more than just a meaty marinara sauce. With this ragu, the beef pressure cooks into the sauce, making it rich and almost buttery. The flavor is so deep and complex, and the beef is so tender and soft…it is seriously HEAVEN. Cozy food heaven 😉.

Number 4: Instant Pot Creamy Chicken Noodle Soup

Because can you even really have a list of cozy foods without a chicken noodle soup in there somewhere? I’d argue strongly that the answer to that question is a hard NO. And to up the comfy cozy factor even more, this is a thick and creamy chicken noodle soup…all the heart eyes on this one, friends.

Number 5: Instant Pot Chicken and Wild Rice Soup

This soup is just soul healing, that’s all there is to it. It’s impossibly thick, creamy, hearty, and as comforting as food can possibly be. Make this one – you won’t regret it – it’s one of my faves!

Number 6: Instant Pot Hearty Moroccan Vegetable Beef Soup

Okay, not only does this just look and sound straight up delicious, the cozy factor is upped even higher with this soup thanks to some warm spices like cumin, cinnamon, and allspice. I am alllllllllll about this Moroccan beef and veggie stew life, yo. ALL BOUT IT.

Number 7: Instant Pot Short Ribs

Short ribs = the most rich, unctuous, hearty, warm, comforting meat of all time. It doesn’t hurt when you serve these tender, buttery, fall-apart-when-barely-touched-with-a-fork short ribs over a steaming pile of mashed potatoes and then drench them in sauce (i.e. thickened braising liquid). Last but most definitely not least: mac and cheese! Because mac and cheese is just one of those things that has to be included in a comfort food list. It’s the perfect mix of simple, comforting, cozy, and nostalgic, bringing you back to those sweet childhood days.     You know my secret too! Throwing some pumpkin or squash into chili. It’s a nice way to make it a bit richer and creamier but still keeping it healthy.
