^^Oh boy. This is happening.
BUT wait. Before I start talking about all of this, quick life updates. YES I have been the worst blogger in the history of bloggers for baaasically the entire last month (#whathappened), but we have had a ton, ton, TON going on over here. I was out of town/had company staying at my house for basically a month, and theennnn my husband came home from his deployment πππ!!!!
So I’ve been highly preoccupied with that awesomeness. P.S. Watching him be the best dad ever to Ford has been the highlight of my life. P.P.S. Not single parenting anymore is CHOICE.
Anyway, he’s home, I have no trips planned in the near future, he’s back at work, and I am ready to throw myself back into the blogging world and hope that you can forgive me for my massive amounts of inconsistency lately…life be cray.
So I know that before all this lack-of-blogging-ness happened, I was smack dab in the middle of an Instant Pot series. I still have five recipes left in that series that I need to share with you, BUT a group of family+friends and I have been planning on doing Whole 30 for months now, and we all picked this week as our start date. I toiled back and forth about what to do with the Instant Pot series – whether to just finish it on the blog while doing Whole 30 or wait until Whole 30 was over to share the remaining five. I decided to go with the latter because I want to blog about Whole 30 while I’m doing it – sharing recipes, talking about the experience in general, etc…
Soo…in conclusion. Hang in there for the rest of those Instant Pot recipes – we will be done with Whole 30 on March 29th, and at that point I will finish posting the Instant Pot yumminess! I would rather not interrupt a series right in the middle like this, butttttt lyfe happens, nah mean?
On that note – have you heard a lot about Whole 30? It’s basically a 30 day challenge to eat totally whole foods, and at the end of the thirty days, you reintroduce things like grains, gluten, dairy, and sugar slowly to see if your body performs worse with any of these things in your diet.

I’m doing it with a group of family and friends, and we even made a Facebook group to go full out nerdy. Our cover photo describes the imminent Whole 30 struggle:

So right now I am sitting here on day one of Whole 30, sipping a cup of unsweetened (slight strug) bulletproof coffee (bulletproof = blended with ghee and coconut oil – DON’T KNOCK IT ‘TILL YOU TRY IT, FRIENDS), and planning out our week of food.
