Mustard Chive Potato Salad

Ingredients

  • 1.5 pounds yellow potatoes
  • 2 tablespoons Dijon mustard
  • 3 tablespoons light mayonnaise
  • 2 tablespoons chopped chives plus more for garnish
  • Salt

Instructions

  1. Bring a pot of SALTED (it should taste like the ocean) water to a boil
  2. Chop your potatoes into 1/2 inch cubes
  3. Add them to the boiling water and reduce to a simmer
  4. Simmer the potatoes for 10-15 minutes, or until they are tender when you pierce them with a fork or knife
  5. Drain the potatoes in a colander for a few minutes until they are dry
  6. Add the potatoes to a bowl
  7. Place the bowl in the fridge and leave until the potatoes are cold, or until you are almost ready to serve
  8. Take the potatoes out and fold in the mustard, mayonnaise, and chives
  9. Season to taste with salt
  10. Garnish with extra chives
