This crazy quick and simple dinner will become a new weeknight family fave!

Ingredients

  • 1 pound ground chicken
  • 3 oranges, zest from 1, juice from all 3
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 cloves of garlic, minced
  • 1 shallot, minced
  • 1 tablespoon cornstarch

Instructions

  1. Heat a large skillet over medium high heat with some olive oil (coconut or avocado also work)
  2. When hot, add your ground chicken, season with salt and pepper, and break up with a spoon or spatula. Leave it to cook and brown while you start to prep your sauce
  3. For your sauce, add all the remaining ingredients except for the cornstarch to a medium bowl
  4. Stir and break up the chicken occasionally and leave it to finish browning while you finish your sauce
  5. When your chicken has browned, add your sauce, stir to combine, and simmer for 5 minutes
  6. Meanwhile, add your cornstarch to a small bowl and stir together with just enough water to make it liquidy and pourable
  7. Stir the slurry into your simmering sauce and cook for a few more minutes until the sauce has thickened. Season to taste with salt and pepper!

This is perfect served over rice! Jasmine is our fave.
