Warm Black Bean and Quinoa Salad with Spicy Lime Dressing

Ingredients

  • 2 cups COOKED quinoa (I would recommend using chicken/veggie stock as the cooking liquid)
  • 1 cup black beans, drained and rinsed
  • 2 cups diced bell pepper (about 2 peppers) – any color works
  • 1/4 cup shallot, finely minced (about 1 medium shallot)
  • 3/4 cup cilantro, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 3/4 of a medium avocado, diced
  • For the dressing:
  • 2 tablespoons lime juice
  • 4 tablespoons (1/4 cup) olive oil
  • 1/4 teaspoon honey
  • 1/8 teaspoon cayenne pepper
  • 1 clove garlic, grated

Instructions

  1. While your quinoa is cooking, prep all your veggies
  2. Right when the quinoa is done, while it is still warm, add it to a large bowl with the black beans, peppers, shallot, cilantro, cumin, and chili powder
  3. Season with salt and pepper and mix together thoroughly
  4. When ready to serve, fold in avocado and spicy lime dressing
  5. Season to taste with salt and pepper!
