Turkey and Black Bean Bell Pepper “Nachos”

  • 20 ounces ground turkey (I used 93% lean)
  • 1 can black beans, drained
  • 1 packet of taco seasoning
  • 1 tablespoon fresh lime juice
  • 5 bell peppers, sides sliced off into 4 pieces total per pepper
  • 1 1/4 cup shredded cheddar cheese
  • Toppings can include: cilantro, onion, Greek yogurt/sour cream (or anything else you love on your nachos!)

Instructions

  1. Preheat your oven to 400 degrees. Place your bell pepper slices on a baking sheet, season with salt and pepper, and bake in the oven for ten minutes, just so they are slightly softened. If any moisture has collected in the pepper cups when they finish baking, pour that out before stuffing.
  2. Meanwhile, add 1 teaspoon of olive oil into a non-stick skillet over medium high heat. Add your ground turkey, season with salt and pepper, and cook, breaking up with a wooden spoon, until the turkey is browned
  3. Add the black beans, 1/3 cup of water, lime juice, and your taco seasoning. Cook until the liquid has reduced and has become saucy
  4. Stuff your meat and bean filling evenly into each bell pepper, sprinkle the cheese evenly over all of them, and throw them back into the oven just until the cheese is super melty
  5. Top with whatever toppings you desire, and you’re done!

Notes
