Skinny Pumpkin Spice Latte

- 2 cups coffee
- 3 tablespoons pumpkin puree
- 1/2 teaspoon pumpkin pie spice (homemade or store bought!)
- 1 cup 2% milk
- 4 tablespoons sugar in the raw (turbinado sugar)
- Brew your coffee
- In a small pot, add the pumpkin puree and the pumpkin pie spice
- Cook over medium-high heat for 30 seconds to 1 minute
- Whisk in your milk and sugar
- Cook this until the milk is just about to simmer. It will be lightly bubbling up around the edges of the pot
- Place the milk mixture in a blender (this works great with a magic bullet) and blend for about 30 seconds or until the milk is frothy
- The combination of coffee and milk mixture will depend on your preference, but I thought 1 cup of coffee and 3/4 cup of milk mixture was a good proportion! Add more or less depending on how sweet you like your coffee :).
