Skinny Pumpkin Spice Latte

  • 2 cups coffee
  • 3 tablespoons pumpkin puree
  • 1/2 teaspoon pumpkin pie spice (homemade or store bought!)
  • 1 cup 2% milk
  • 4 tablespoons sugar in the raw (turbinado sugar)


  1. Brew your coffee
  2. In a small pot, add the pumpkin puree and the pumpkin pie spice
  3. Cook over medium-high heat for 30 seconds to 1 minute
  4. Whisk in your milk and sugar
  5. Cook this until the milk is just about to simmer. It will be lightly bubbling up around the edges of the pot
  6. Place the milk mixture in a blender (this works great with a magic bullet) and blend for about 30 seconds or until the milk is frothy
  7. The combination of coffee and milk mixture will depend on your preference, but I thought 1 cup of coffee and 3/4 cup of milk mixture was a good proportion! Add more or less depending on how sweet you like your coffee :).
