Pumpkin Chili

  • 2 pounds ground beef
  • 2 onions, diced
  • 5 cloves garlic, minced
  • 14 oz can pumpkin puree
  • 4 tablespoons chili powder
  • 3 tablespoons cumin
  • 32 oz box beef stock
  • 14.5 oz can diced tomatoes
  • 28 oz can crushed tomatoes
  • 1 tablespoon cocoa powder


  1. Add the beef to a large pot, season with salt and pepper, and brown
  2. When the beef is browned, add your onion and garlic + a splash of beef broth to deglaze the pan, and cook for a few minutes until the onion has softened
  3. Add the pumpkin, stir to combine, and cook for a minute or two, stirring often
  4. Add your chili powder, cumin, both cans of tomatoes, and your beef stock. Season well with salt and pepper
  5. Bring to a boil, reduce to a simmer, and cook for 30 minutes, stirring periodically
  6. Stir in your cocoa powder and season to taste with salt and pepper!
