Pineapple, Basil, and Coconut Ice Pops

- 2 cups fresh pineapple, diced (2 purple containers)
- 1 cup light coconut milk (4 blue containers)
- 1 tablespoon fresh lemon juice
- 2 teaspoons honey (optional if you want the recipe to be vegan)
- 2 tablespoons sliced basil leaves, very loosely packed
- Blend all ingredients EXCEPT basil together until fully combined
- Add basil and blend until just combined
- Pour into popsicle molds (or small paper cups with popsicle sticks) and freeze until solid
