Pineapple, Basil, and Coconut Ice Pops


  • 2 cups fresh pineapple, diced (2 purple containers)
  • 1 cup light coconut milk (4 blue containers)
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons honey (optional if you want the recipe to be vegan)
  • 2 tablespoons sliced basil leaves, very loosely packed


  1. Blend all ingredients EXCEPT basil together until fully combined
  2. Add basil and blend until just combined
  3. Pour into popsicle molds (or small paper cups with popsicle sticks) and freeze until solid
