Peach, Goat Cheese, and Basil Toasts

- 1 whole wheat baguette (you will need 8 slices, each about 3/4 inch thick)
- 4 teaspoons olive oil
- 1/2 cup goat cheese
- sliced basil, about 8 leaves
- 1 peach
- Preheat your oven to 350 degrees
- Brush each slice of bread with 1/2 teaspoon of olive oil (about 1/4 teaspoon on each side)
- Bake for 5 minutes, turn, bake for another 3 minutes (you may need less or more time – just bake until golden brown on both sides)
- Spread 1 tablespoon of goat cheese onto each slice of bread
- Top with one slice of peach (each slice of peach should be a little less than one inch thick – about the same thickness of the bread slices)
- Sprinkle the sliced basil over top (if you want, you can put the basil under the peaches so it stays on better – it just looks a little less pretty!)
- Top each toast with a little black pepper
