2 Ingredient Coconut Date Rolls - These healthy treats are SO easy to make, only require 2 ingredients, and satiate that sweet tooth in the best way.

These healthy treats are incredibly easy and quick to make – a great thing to have around when a sweet tooth hits!


  • 2 cups pitted dates
  • 2 cups unsweetened, shredded coconut (plus a little extra for rolling at the end)


  1. Add 2 cups dates and 2 cups shredded coconut to a food processor. Blend until an even “paste” or “dough ball” has formed
  2. Remove the lid, scoop out portions with a cookie scoop (about 2 tablespoons), roll/form into a tater tot shape, and roll around in extra coconut until coated.
  3. Store in a sealed Tupperware at room temperature (the fridge makes them too firm, in my opinion).
