15 Minute Mango Salsa

Ingredients

  • 1 pound mango, diced (3 cups)
  • 2 jalapenos, ribbed and seeded, finely minced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely minced
  • 2 limes, juiced
  • 1/2 cup chopped cilantro (about 1 bunch)

Instructions

  1. Add all ingredients to a bowl, stir to combine, and season to taste with salt and pepper.

Notes

This salsa is delicious with chips or served over grilled meat and fish!
