These oddly colored popsicles are the perfect treat for spring and summer! The base is my favorite smoothie recipe, so I was guaranteed to love the frozen version.
The mixture of strawberries, spinach, banana, Greek yogurt, and coconut water is seriously the most delicious combo for the smoothie. Because strawberries and bananas are naturally sweet fruit, you don’t need to add any honey or other type of sweetener – it’s perfect just the way it is! And soooo healthy.
I wake up and drink this smoothie every morning, and I never get sick of it! So when I decided I wanted to make a super healthy popsicle recipe, I thought this smoothie would be a perfect base. To health it up even more I threw in some ground flax seed.
This recipe is such a great way to sneak some superfood into your kid’s bellies! They will never know they are eating something healthy ;). MUAHAHAHAAAAAA.
They definitely aren’t the prettiest little babies (you can thank the spinach for that), but they taste ah-maaaaazing.
Not to mention they are nice and cold which is perfect for this hot weather we are experiencing in Georgia right now. It is seriously hot down here! Like middle of summer hot. It’s almost 90 degrees outside right now. That’s just not fair.
Dear Georgia,
It’s May. It’s supposed to be beautiful and sping-y and perfect outside.
Please adjust accordingly.
Thank you.
Seth is currently sitting next to me on the couch holding an ice pack to cool himself down….needless to say, these popsicles are the perfect thing for us to have hanging around the house right now!
I hope you enjoy these as much as we did :).

I drink a smoothie similar to this every single day… But I bet it would be way better in popsicle form!!
Also, when I woke up this morning (in Boston), it was 39 degrees :(

There are so many at Ross, Marshalls, and TJ Maxx! I got mine at Walmart but I like the ones at those other three places SO much more. I wish I had seen them earlier! That is such a great idea for a vegan substitute! Thank you!
