Stuffed Grilled Peaches with Black Pepper Honey

  • 2 ripe peaches, halved with pit removed
  • 1/4 cup honey
  • 1/2 teaspoon fresh cracked black pepper
  • A small handful of basil leaves (about 5 or so), thinly sliced
  • 2 tablespoons mascarpone cheese
  • 2 tablespoons goat cheese

Instructions

  1. Preheat your grill over medium – medium high heat
  2. Lightly brush the cut side of your peaches with olive oil and lightly season with salt and pepper
  3. Grill the peaches just until they have charred grill marks across the surface, and then remove them from the grill
  4. Meanwhile, add your honey to a small pot and stir in your pepper. Bring this to a light simmer over medium heat and let it simmer for just a few minutes. Set aside
  5. To make your filling, stir together the goat cheese and mascarpone. Set aside
  6. To assemble, spoon about 1 tablespoon of filling into the center of each peach, lightly drizzle some of the black pepper honey over top (not too much!), and finish with sliced basil

Notes

Slicing the peaches and removing the pit can be tricky to do neatly, especially if your peach is very ripe. The best way is to slice all around the peach in a circle (like you would an avocado), and then hold each side in your hand, lightly turning back and forth until the halves have loosened enough to release. Then take a small paring knife and make small cuts around the pit before popping it out. The good news is, even if it’s not pretty, it’ll be grilled and stuffed and topped with things, so it doesn’t really matter!
