Mini BBQ Meatloaves

These little mini meatloaf muffins are absolutely delicious, super easy to throw together, and so much fun to eat!

Ingredients

  • 1 pound ground pork
  • 1 pound ground turkey
  • 2 eggs
  • 1/2 onion, grated
  • 2 cloves of garlic, grated
  • 1/2 cup grated white cheddar cheese (regular cheddar or any other type of cheese works too)
  • 1/2 cup panko bread crumbs
  • 1 teaspoon salt and several grinds of black pepper
  • 1/2 cup BBQ sauce (I always use Sweet Baby Rays)
  • Something to grease your muffin pan with – I used coconut oil cooking spray

Instructions

  1. Preheat the oven to 350 degrees
  2. In a large bowl, combine both types of ground meat, the eggs, onion, garlic, cheese, panko, and salt/pepper. Mix with your hands until combined
  3. Grease your muffin tin and fill each cup evenly with your meatloaf mixture
  4. Place in the oven and bake for 15 minutes
  5. Remove after 15 minutes and spoon/brush your BBQ sauce evenly across the top of each meatloaf
  6. Bake for another 10 minutes

Notes

When you remove your meatloaves from the oven after the 15 minute mark and after they are completely finished, there may be some grease and liquid that has seeped out onto your muffin tin. You can dab this off with paper towels or leave it. Either way, when you pull the meatloaves out, the liquid/grease will stay behind.

If you want to test the seasoning in your meatloaves before baking them, form a very small patty (about a teaspoon) and cook it in a small skillet. I always do this before cooking meatballs, burgers, or meatloaf just to make sure everything tastes right!
